Sometimes you just have those moments where there isn’t enough time in the world. I totally get it. You want to do 100 things at one time so something has got to give. Is it lunch? No way! I admit, alongside a huge chunk of people in the world, I skip breakfast and that means I need to ensure that I have something good, nutritious and filling to eat for lunch. I am BIG on easy recipes because the world of cooking and food can get really overwhelming. In my opinion, cooking should be fun and not stressful so simple and yummy recipes are the best thing for busy people! So, today I want to talk about delicious and easy lunch recipes for busy people and the importance of meal prepping.

Why Is Meal Prepping Important?
If you like making the most out of your day, meal prepping is for you! I try and make my relationship with food very healthy. So focusing on eating whole foods and ensuring that I get a balanced amount of nutrients is important to me and I needed to find a way to create easy lunch recipes for busy people like myself!
How To Meal Prep + Save Time
Choose your recipes
An easy way to meal prep is by choosing 2-3 recipes weekly that you want to make and list them out. Don’t be afraid of making double the recipe if you feed multiple people that way you have extra food for a day or two.
PRO TIP: Make sure to choose recipes that you can intertwine and spruce up if you need to.
Create a list of groceries
After you’ve chosen your recipes for the week, list out the ingredients for every recipe and check your kitchen for what you already have and take it off your list. Once you’ve got a final list of groceries you need, grab them on Saturday night or Sunday morning to set up for the week.
Meal prep
Make and prepare what you can on Sunday and leave the rest to make mid-week if needed. Freeze big batches so you can have them again the following month.
How To Meal Prep Successfully
I get that just hearing the words “meal prepping” can be overwhelming but it will help in the long term and you will get the hang of doing it more often. You’ll add more recipes that you like to your meal preps and have a full list of easy lunch recipes for busy people to share with family and friends! It’s best to have a notebook or whiteboard on the fridge so that you can see what food you’re having for the week and what/when you need to make things. By constantly having reminders, you know what to look forward to and it’s harder to forget and get disorganized!

1. MAPLE APPLE PORK LOIN CHOPS
Maple Apple Pork is definitely a fall-inspired recipe but so delicious to have year-round! I use the leanest pork and enjoy this with a side of steamed veggies and/or fresh salad. These take about 20-30 minutes to prepare and keep well in the fridge for up to 2 days. This recipe is perfect to enjoy for Sunday dinner with a side of rice and steamed veggies and the leftovers to have for Monday/Tuesday Lunch with some raw veggies or salad mix.

2. WATERMELON ARUGULA SALAD
Watermelon Arugula Salad is a light summer-inspired recipe and perfect for hot summer days! I like to make this recipe with super sweet watermelon and crumbly feta cheese. These should be made and consumed basically at the same time as they do not keep or store well. Luckily, this recipe takes about 15 minutes to prepare and the same amount to enjoy so you can make this for lunch whenever! This recipe is perfect to enjoy if you work from home and want something light to enjoy. If this isn’t filling enough, you can have a piece of toast or a roll on the side.

3. SHRIMP CEVICHE
Shrimp Ceviche is an amazingly fresh and crunchy salad recipe to have with a side of yummy tortilla chips! I not only have it for lunch, I also enjoy it for happy hour with the girls and hot summer days where I just can’t get myself to cook or stand in front of the oven. This recipe is perfect to enjoy if you want something fresh and savoury for lunch. Shrimp Ceviche keeps for up to one day so it’s best to have it for dinner then lunch the following day. Store your chips and ceviche in separate containers to avoid a soggy meal!

4. PINEAPPLE COCONUT CHICKEN
Pineapple Coconut Chicken is a sweet and savoury meal and is best served with rice. You can make a pot full of this and freeze half for later or have this meal 2-4 meals in a week! Have this for lunch and imagine you’re on an island in Asia enjoying time on a beach! This recipe is perfect to enjoy if you want something heavier or have days where you are heading to the gym after work. This will keep you satiated till dinner!

5. CLASSIC TUNA SALAD
Classic Tuna Salad is a lunch staple! I swear tuna salad was made specifically as an easy lunch recipe for busy people. Tuna Salad keeps for about 2-3 days in a cold temperature fridge. The great thing about Tuna Salad is that it’s so easy to make and it always turns out great! With such little ingredients, you can make these whenever, wherever!

6. SALMON PATTIES
Canned Salmon Patties are one of my fav recipes to make when you don’t have much time to plan. Using canned salmon takes a lot of pressure out as you can make it whenever you want and add any veggies you have at home! The two main ingredients in these salmon patties are canned salmon and breadcrumbs then you can add anything else you have at home in them.

7. FRESH VIETNAMESE SPRING ROLLS
Fresh Vietnamese Spring Rolls are such a filling yet lightweight and easy lunch you can make! Fill these with your choice of protein, vermicelli and lettuce then dip it in a hoisin and peanut butter mixture and you’ve got the best lunch you’ll be thinking about for days! The best thing about these spring rolls is that you can be as creative as you want and add in whatever toppings you’d like.

8. PASTA SALAD
Pasta Salads are awesome lunches! You get the fullness of adding pasta into your salad but also super healthy and filled with nutrients! Aside from cooking the pasta, the rest of the dish requires no cooking. This pasta salad is a great lunch and keeps for a few days. For better results, keep the veggies, pasta, cheese and dressing in separate containers and just add them together the day you’re having it for lunch.

9. GRILLED CHEESE
Grilled cheeses will always hit the spot, am I right? I always love a standard grilled cheese when I only have a few minutes to scarf down lunch. Of course, you can add whatever you want as well! Popular add-ons are tomatoes, ham, turkey, and pesto! I can’t fully say that grilled cheese is good for you health-wise but it’s definitely a filling lunch when you need/deserve it!

10. CREAMY COCONUT SWEET POTATO PASTA
Creamy Coconut Sweet Potato Pasta is a great dish that you can enjoy if you’re looking to have a meatless/vegan meal. I try and incorporate meatless meals every week as I love having balanced meals and very a variety of food!
