If you ask me, my favorite meal of the day (after brunch, of course) is dinner. Dinner is quite a big deal to me. I always get so excited when dinner time comes around because I get to prepare my last-minute dinner dishes. I usually never plan what I’m going to eat because I absolutely love coming up with my dishes at the moment. It adds some excitement and mystery to my day, haha. Nevertheless, I always end up with mouth-watering dinner dishes. So, if you’re in need of some dinner ideas, here are 5 easy, healthy and delicious dinner recipes that you should try (by the way, all of these dishes include at least one fruit, one vegetable, and one source of protein….woo!)

Creating my dishes as I go, not only brings me excitement but it also helps me save time and money because I’m forced to create dishes with ingredients that I already have in my fridge. Since I only shop for groceries during the weekends, I try to use whatever I have in my fridge during the week to avoid going out for groceries again.


I started creating last minute dishes because I was always to busy to plan out my dinners. However, I never thought that I’d actually turn it into a daily habit that I now LOVE so much. I have been sharing some of my dinner dishes on my instagram page and because I have received so much positive feedback from my instagram family, I have decided to bring my dishes over to the blog as well.

  • Mini Salad (sliced tomatoes, spinach, olive oil, and salt)
